I’ve been trying out the farmers market a lot lately and I made this amazing creation that I saw on Facebook! I made this last weekend and completely forgot to share it! I feel like everyone in the world loves avocado toast! So here is a twist on your favorite breakfast!
Using a whole sweet potato made 3 pieces of toast. I could only eat two of them and decided to save the other piece for breakfast in the morning! I would not recommend this, I didn’t realize it would get all soggy in the fridge so this was no bueno. But when they are hot and fresh, they are AHHMAZZZING! YUM YUM YUM!
So all you need is:
1 Sweet Potato
A handful of cherry tomatoes
A pinch of garlic
1 Teaspoon of lemon Juice (the original recipe didn’t call for lemon juice, but I wanted to give it a little twist and I thought it gave a nice flavor)!
FOR THE BASE:
Cut up the sweet potato into slices as if you were going to make sweet potato fries. (You should have 3 or 4 long oval slices). This will substitute for your toast!
I also never knew you could do this, but just place those sweet potatoes right into the toaster like bread!! I had to run mine through twice to make sure they were soft enough and had a nice browning, but it worked out so well!
FOR THE TOPPING:
Place 1 avocado in a bowl and mash it up with a fork.
Once it has a guacamole texture, mix with the garlic, sea salt, pepper, and lemon juice.
Slice the cherry tomatoes in half and add to avocado mixture!
When the sweet potatoes are browned and ready to be topped, spread that avocado mixture on there and enjoy! I thought this was such a great substitute to bread! Also I have a great love for sweet potatoes so I will definitely make it again!
